Tailed peppers (Piper cubeba), China.

Forward flavour: Peppery spices.

Supporting flavour: Slight bitterness.

KOMBU ROYALE

Royale (Laminaria saccharina), Northern Ireland.

Forward flavour: Salty.

Supporting flavour: Hints of mint.

SEA BUCKTHORN

Sea Buckthorn (Hippophae), Ireland.

Forward flavour: Sour.

Supporting flavour: Slight fruity sweetness.

NOSE

Initially very fresh citrus, followed by juniper and hints of a savoury saltiness

PALETTE

Fresh citrus notes are followed by classic juniper with sharp & warm spices from ginger & cassia. These flavours are proceeded by an unusual, fresh, sea-inspired saltiness. This unique combination of flavours is harmonised by a mellow buckwheat mouthfeel.

FINISH

Peppery spices enhanced by the tailed pepper carries over into a long finish
